Roast Chicken - Жареная курица

Дополнительные приправы:

Stuff the chicken with wedges of 1 Lemon and 3 sprigs of Rosemary.

  • 100 сливочного масла
  • 3 зубчика чеснока, мелко нарезанный
  • 1 tbsp sage (шалфей), мелко нарезанный
  • 2 tsp rosemary (розмарин), мелко нарезанный
  • 1 tbsp петрушка, мелко нарезанный
  • 1/2 tsp по соли и черного перца
  • 2 tbsp сок лемона

Подготовка:

  1. Place the chicken on the counter 30 minutes before preperation
  2. Preheat the oven to 220oC
  3. Raise the Chicken off the bottom of the pan with either onion slices or use a layer of spoons.
  4. Optionally apply a herb and spice mix:
  5. Add chopped garlic to the pan along with 2 tbsp of olive oil.
  6. Mix the butter, herbs, spices and lemon juice.
  7. Loosen the breast skin and the thigh skin with a small spoon.
  8. Drizzle the herb butter under the skin.
  9. Smear some butter over the outside of the Chicken.
  10. Sprinkle with salt and pepper.
  11. Add 1 cup dry white wine to the pan.
  12. Cooking time: 10 minutes at 220oC, then reduce temperature to 180oC and continue cooking for 20 minutes/500gm until the internal temperature reaches 75oC
