- Pork (вырезка or other clean cut) cleaned of connecting tissue and fat, cut into strips about 5cm diameter and 10-15cm length
- One green vegetable:
- If кабачок, one, cut into thin strips about 2-3cm long
- If broccoli, florets split into small florets
- Garlic (2-3 зубчика), diced
- Medium onion, diced
- 2-4 tomatoes, diced
- Сметана, 2 tablespoons
- Parmesan, about half a block, shredded
- Black pepper, oregano, basil (dried or chopped)
- Olive oil
This is not a dish where you can make extra and reheat.
Heat olive oil in skillet with black pepper to medium-high heat. Sear the pork, but do not overcook. Remove pork to a plate.
Add more olive oil if needed, reduce heat to medium. Saute garlic and onion until translucent, do not caramelize.
Add the tomato, oregano, and basil, raise heat back to high, saute until tomato begins to melt.
Add the vegetable. If it is broccoli, you may need to add some water as well, so that it can steam, depending on the wetness of the tomatoes. Saute until about halfway cooked. In parallel, cut the pork strips into circles.
Add the pork back with more black pepper. Stir often to get the pork to the heat on both sides until the red centers begin to lighten. Do not overcook.
Reduce heat to minimum, cover to allow to steam. In parallel, start the water for the pasta - penne works well with this.
When the pasta water is ready, uncover, leaving heat on minimum, and stir in the сметана. Put in the pasta to cook. Allow the skillet to slowly reduce at low heat.
When pasta is ready and on the plates, quickly stir in the parmesan evenly and serve hot.
