Holladaise Sauce

Instructions

Ингредиенты:

  • 4 Яичные желтки
  • 90 г сливочного масла
  • 3/4-1 tsp Holladaise Spice mix
  • 2 Tbsp Сок лимона/лайма

Holladaise Spice mix:

  • 1 tsp Кайенский Перец
  • 1 tsp Черный Перец
  • 1 tsp Паприка
  • 1 Tbsp Соль

Подготовка:

  1. Separate egg yolks from the egg whites.
  2. Around the rim of a dish, distribute slices of softened butter to facilitate adding to the egg yokes.
  3. In a double boiler, heat the egg yolks while constantly wisking, add slices of butter after each slice has melted.
  4. After half the butter has been added, add the dry spice mix, while continuing wisking.
  5. Add the remaining butter, slice by slice.
  6. As the sauce begins to thicken, add the lemon/lime juice, continue wisking until the desired consistency is achieved.
  7. Remove from heat and serve while still hot.
